di Faenza Sangiovese DOC Renero 2005 Made in: Monticoralli Faenza Grape variety: Sangiovese 100% Aging: 5/6 years Organoleptic charachteristics: Colour: deep red with violet tints Fragrance: violet and berries Taste: warm and supple Alcohol: 13,47 vol.% Reducing sugars: 0,17 vol.% Total acidity: 4,70 g/l Dry extract: 27,30 g/l Suggested dishes: read meat and pasta with meat sauce Serving temperature: 18/20°C, open 2 hours before serving This is another new DOC wine of the hills of Faenza, that impose more rigorous rules than the traditional DOCs. The maximum output per hectare is 90 Ql. The type of clone of Sangiovese that we chose ripes around the middle of October, when the grapes are carefully selected and harvested in 20 Kg. boxes. The vinification is slow with a long maceration with the skins. The wine is then clarified for 3\4 months in 225 Lt. oak barrels. It is then bottled around the end of March and put on the market the 1st of May. |
